Lemon Drizzle Muffins

Today I thought I would share with you my loved recipe Lemon Drizzle Muffins. Any individual who knows me, will reveal to you they are heavenly and never last long! This makes a dozen medium sized muffins and half an hour in total prep and baking time.

Ingredients:
175g Caster or Granulated Sugar
175g Room Temp Unsalted Butter
175g Self Raising Flour
3 Large Free Range Eggs
2 Large Lemons Zested
2 Large Lemons Juiced
Tsp Vanilla Essence
50g Granulated sugar (for Icing)
3 Tsp Lemon Juice (for Icing)


Step One - Preheat your Oven to 200 degrees celcius and grease your muffin tins. Cream together your butter and sugar until light in colour and well combined. Add in your vanilla extract and then stir in each egg combining each one into the mixture before adding the next.


Step Two - Add in your Flour a spoonful at a time to the wet mixture and mixing well in between each addition, then fold in the Lemon juice and zest. Spoon the mixture into your pre greased muffin tins and pop into the oven for 20 minutes until golden brown. When you pop a skewer in it should come out clean.


Step Three - Whilst the muffins are baking, take your remaining granulated sugar and lemon juice and mix together to make the icing. Once the Muffins are baked to perfection poke holes in the top of each one and spoon over a generous spoonful of the drizzle we just made.


At this point they are now ready to eat and will keep in an airtight container for up to a week. You can choose to add any sprinkles of your choice, I opted for some elderflowers I had left over from a previous recipe. Now Enjoy!

  5. Ahhhh! My fav muffins, very close to choco chip ones. If I make them at home or someone does, we have to make them again quickly as we finish them quickly. I am better off to control my sweet tooth :). Good & detailed recipe!
