Chicken & veggie skewers - tasty tuesday

Welcome back friends, today I thought I would bring you a fab, fun and easy peasy recipe to kick-start the summer with. These amazing Chicken Skewers are one you can either save for the BBQ or have just as much fun cooking them on the grill. I opted to cook them indoors on the grill and It was almost like bringing the BBQ inside!


The first step is making the saucy marinade for the chicken and the longer you leave the chicken in this sauce the better it will taste, I promise! I like to make mine the night before and leave it in the fridge overnight to absorb all the yummy goodness.


Ingredients
-          600g Chicken Breast, Diced
-          1 clove Garlic, Minced
-          Sprinkle of chilli flakes
-          3tbsp Dark Soy Sauce
-          2tbsp Olive Oil
-          1tsp Honey or Maple Syrup
-          Wooden skewers soaked in water for an hour or more
-          Veggies of choice (optional)
-          Sea Salt & Black Pepper


I like to take a freezer safe sandwich bag add in all my diced chicken breast and then throw in all of the ingredients for the marinade and shake it all up, that was so simple, right? Then just pop it in the fridge overnight.


The next day just chop up your favourite veggies I like to use, mushrooms, peppers and chunks of red onion. Then just slide them onto your skewers along with your juicy marinade chicken breast chunks. Remember if your using wooden skewers soak them in water an hour before doing the last step so they don’t burn in the cooking process.


On a medium heat with a little oil I added my chicken skewers into my griddle pan and I cooked mine on a medium to low heat, making sure to turn them half way through, until golden brown on each side and making sure the chicken I cooked all the way thoroughly. You could alternatively cook them on the BBQ too.
